
I have a new recipe for baked salmon that I found in the Delish cookbook. Both G and I are now total fans! I’ve been trying to do a lot of homework.
I know this is not the best picture, but this is the versatility of the recipe. it’s not like white fish. Salmon does not go in a multitude of recipes. It makes a great meal and it’s super easy to bring it all together. I’m a big salmon freak and I would use the leftovers in a variety of dishes including salmon spread, salmon pie, salmon patties. You get my drift. Give it a try and check out the Delish cookbook.
INGREDIENTS
2 lemons, thinly sliced
1 large salmon fillet (about 3 lb.)
Kosher salt
Freshly ground black pepper
1 tsp. dried oregano
Chopped fresh parsley
6 tbsp. butter, melted
2 tbsp. honey
3 cloves garlic, minced
DIRECTIONS Preheat oven to 350°. Line a large rimmed baking sheet with foil and grease with cooking spray. To the center of the foil, lay lemon slices in an even layer.
Season both sides of the salmon with salt and pepper and place on top of lemon slices. In a small bowl, whisk together butter, honey, garlic, and oregano. Pour over salmon then fold up foil around the salmon. Bake until the salmon is cooked through, about 25 minutes. Switch the oven to broil, and broil for 2 minutes, or until the butter mixture has thickened. (I did not do this)
